You run the stall. Move with the keyboard, grab ingredients, cook at the stations and hand plates to customers before they lose patience.
Each run lasts fifteen days with three lives. At night you pick one of three cards and buy new equipment, which is how new dishes join the menu. Win the run and the stall stays open for endless overtime.
